Recipe of the Week

One of my friends gave me a suggestion for my blog...to post a recipe of the week! She knows about my love of eating and that cooking is one of my favorite things to do! So, I'm giving it a try! Cody and I planted a garden this year and it's actually doing really well! Right now, I have zucchini coming out my ears, so my recipe for this week IS.....Zucchini Bread! ENJOY!!!

3 eggs
1 c. oil
2 c. sugar
2 c. peeled, grated zucchini
2 tsp. vanilla
3 c. flour
3 tsp. cinnamon
1 tsp. baking soda
1/4 tsp. baking powder
1 tsp. salt
1/2 c. chopped nuts (Optional)
1 pkg. chocolate chips (Optional)
Streusel topping (Optional) (Recipe follows)
Preheat oven to 325 degrees. Grease and flour 2 loaf pans. Beat eggs, add oil and sugar. Stir in zucchini, and vanilla. Mix dry ingredients and add to liquid batter. Top with streusel topping and divide between 2 loaf pans. Bake 60 to 70 mins.

Streusel Topping
1 c. brown sugar
1 c. flour
2 Tbsp. butter
2 tsp. cinnamon
1/2 c. chopped nuts (optional)

Babysitter Problem SOLVED!

So you all know that I have been looking for a new babysitter for Maycie. I have really worried and stressed over leaving her, so I was entertaining the idea of quitting the clinic and watching some coworkers kids at home. Well, after thinking, pondering, praying, and a few tears, I've decided to just keep working my 2 1/2 days at the clinic. I want more than anything to be able to be a full time wife and mom, but doing daycare is not the answer for me. I did a trial run last week and although it was quite fun, I was completely exhausted at the end of the day, and I just didn't feel good about it. I feel really selfish for thinking of myself right now and I'm feeling like the world's worst mom, I mean, shouldn't I be willing to take any opportunity to be able to be home full time??? But I honestly believe that the best thing for me AND my kids is for me to just keep doing what I've been doing. SO....we did find someone willing and excited to take our princess 2 days a week. Cody actually knows her from high school, she seems really nice and both of us feel good about having her there. We feel really blessed to have found her...she just barely had a spot come open the day before Cody called her, and there aren't many daycares out there who will take kids part time. So, it was "meant to be" I guess! I just want to say THANKS to everyone who offered suggestions and gave us names of daycares, and an even bigger THANKYOU and smooches to those who offered to take her knowing that she is a handful and would give you a run for your money, but offered anyway just cuz you love us!!! LOL!!! I am still looking for something that might let me be home and still make a little money (maybe something on the computer?), so if anyone knows of anything like that, let me know!

Happy Birthday Cody! The Big "32"!


Today (7/10) is my honey's birthday! I didn't write anything about him on Father's day, so I just want to tell him how much the kids and I appreciate everything he does for us! He is such a great husband and daddy! He works so hard to provide for us and never complains for even one second. Thanks for everything baby! You're the best...Have a great birthday! I love you so much!

Reunion Time

















Every year, the last weekend in June, we head to Mink Creek, Idaho for the Rasmussen Family Reunion. That is my mom's family. She is the youngest of 15 kids and they have been doing this reunion for like 53 years or something like that. The reunion starts Friday night with a wienie roast and dutch oven potatoes. YUM! Saturday morning they do a big pancake breakfast and then games for the kids. Lunch is usually around noon and it's just a big huge potluck and the reunion ends on Saturday afternoon. My uncle Garland has made a "park" down below his house. It has a huge, flat grassy area for tents and trailers and then he has built a pavilion, swings, a slide and also has outhouses. The creek runs right through the property too and it never fails that some time before the end of the weekend the boys end up in the creek building a dam and playing with the leeches while the little ones ride in the "train"! This reunion is something our family looks forward to every year and we always have such a great time!
